Hello friends! Long time no see!
Things have been busier than I expected for about 2 months. Preparing for our move was insane, so I didn’t get as far ahead in my work as I would have liked. Then 2 weeks working on an organic farm while searching for an apartment didn’t exactly leave time for writing.
Once we moved into our place, we had no internet for quite awhile. I had to go to the library, which was barely enough to keep up with my personal blogging for friends and family.
Finally, we got internet on the first day of my German course, but four hours of German class everyday plus settling in plus our main computer with my files on it not being functional made blogging quite difficult!
And now we finally have the big computer up and it is time to get back to writing. I have a lot planned for this fall and I look forward to sharing it all with you. No GAPS German recipes…yet. To be honest, at the moment we are living on potatoes, sandwiches, and müsli. We have no money with all the moving expenses. But I have other GAPS recipes saved up for you that I know you will enjoy.
Today I am finally sharing a tasty treat that I love to make. These Dark Chocolate Almond Butter Cups are incredibly simple, and it can be as sweet for as dark as you want.
Dark Chocolate Almond Butter Cups
The best way to customize these dark chocolate almond butter cups is with the chocolate. You can use your favorite store-bought chocolate, but I like to make my own. I can use high quality cocoa powder and cocoa butter, and sweeten it with just a touch of raw local honey. I can add flavorings if wanted. Best of all, there is no soy in my homemade chocolate.
I have even made these with no sugar at all! Quite bitter and very hard, so I recommend at least a little honey. It helped keep me from eating too many at once, and they still tasted pretty good. Try it if you want.
Your almond butter will ideally be made from raw crispy nuts ground to butter in a food processor. Megan at Eat Beautiful has a great post about how to make almond butter. Not only is this easier on the gut, but it also is cheaper. I like mine plain; I don’t even add oil to the nuts when making butter. It would also be delicious with a bit of sea salt.
Once you have the ingredients, all you need to make dark chocolate almond butter cups are a makeshift double boiler and a silicone candy mold.
Ingredients
- 1/2 cup chocolate pieces
- 1/2 cup almond butter
Instructions
- Melt half the chocolate in a bowl over hot water.
- Divide the chocolate into the silicone molds, at most a quarter of the way full.
- Divide the almond butter into the molds.
- Melt the rest of the chocolate, and divide it into the molds so that it is covering the almond butter.
- Place in the refrigerator or the freezer until hardened.
- Enjoy!
- Store in a cool place, ideally the refrigerator.
