Today’s guest post is from Kathy of Real Food and Real Fitness. Today she is going to teach us how to make green eggs and ham naturally! Perfect for Dr. Seuss’s birthday, St. Patrick’s Day, or just for fun. Enjoy!

Guest Post: Clean Eating Green Eggs and Ham

“Say!
I like green eggs and ham!
I do I like them, Sam-I-am!”
This is a line from the famous “Green Eggs and Ham” by Dr Seuss.

Growing up I was read this story several times.  Especially on Dr Seuss’s birthday, March 2nd, when every year we would gather in at a school assembly and read “Green Eggs and Ham.”  After which we would all eat green eggs and ham.  This was over 20 years ago and I still remember it fondly.  Do you remember celebrating his birthday?

Looking back now I realize that the eggs were green due to artificial dyes, something that I no longer use.  We have been eating clean for over 1 year now!!! 

Wow, have we seen a lot of benefits from our new lifestyle.

I read this book to my own boys now, Alex and Ben are my 6 year old twins.

Guest Post: Green Eggs and Ham

Luckily at my house we all love fresh eggs, kale, and leeks!  We like to eat baked kale chips, especially Ben.  Alex is a huge fan of leeks; he really likes Creamy Leek and Potato Soup and Pasta with Leeks, Peas, and Ham.

So what’s a clean eating mom of 2 little boys to do to celebrate Dr Seuss’s birthday?

Create a healthy green eggs and ham, of course.  You can use leeks and kale instead of artificial food coloring!  It only takes a few minutes, and is worth the time.

Clean Eating Green Eggs and Ham

Ingredients:

  • 6 eggs
  • 2 tbsp heavy cream
  • 1 ½ cup fresh organic kale
  • Dash of salt
  • Pinch of pepper
  • ½ cup leeks, cleaned and cut into half-moons
  • 1-2 tbsp butter

Directions:

  1. Melt butter in a skillet on the stove over medium heat.
  2. Meanwhile put remaining ingredients into a food processor and blend to a purée.
  3. Add purée to the skillet.
  4. Let the mixture cook for a few minutes, then begin to scramble.
  5. Let the eggs cook thoroughly, then remove from heat.
  6. Serve with fresh organic ham.

My boys have both told me that they love green eggs and ham, and I do too!!! Let me know what you think!
