Yesterday and today I have been in communication with the people running the Engaged Encounter weekend Will and I are going on in two weeks. I really didn’t want to list everything I can’t eat, I’d be happy just picking through the salad bar, but she insisted they make sure the kitchen can be prepared for me. That was an embarrassing email to send. Necessary, and I’m glad I’m making sure I can eat something other than snacks and carrot sticks for those two days, but I am a very quiet, low-key, non-confrontational introvert. The last thing I want is to seem high maintenance. I can hope they’ve had worse people than me, but I don’t know how it could be too much worse than my long list of things I need to avoid, including a definition of nightshades. I therefore including a simple list of things I can eat in the hopes that it helps. It is easy to say, “How can we make her something that doesn’t violate that?” So now they can say, “Okay, we’ll make her chicken and rice and let her go to the salad bar.” This diet is definitely teaching me to question everything in my food. Even with my list I sent them, I’m still worried they will put something really bad and/or processed on my food.
Today I denied some iced tea because I was sure I couldn’t have it. My mom got some and I ended up tasting a sip. It’s just tea, it can’t be that bad, right? It tasted good, but it had an awful aftertaste and I could tell it had things I shouldn’t have. Like sugar. Well, that strengthened my thought about not reintroducing processed sugars for quite some time. Big oops on my part.

Run/Walk 2 miles – My first run since starting this diet. Very hard, but I’m so glad I went.
Summer Goals – Every summer my karate school challenges us to do a certain amount of various activities. This is my 9th summer and I have never completed it. This summer I am much more determined.
Some rough, dry patches, but my skin is looking very good. I shaved today for the first time since my eczema cleared up. Before, shaving was painful. It left my skin itchy and irritated. I stopped doing it unless I really needed my legs and armpits to look nice. But today, no pain! My skin is really healing!
Breakfast: Apple Pie
Lunch: Indian Fried Rice (Whole Life Nutrition Cookbook, p. 222)with spinach and fermented vegetables added. Delicious and so quick to make up! Then I mixed it with my small amount of leftover quinoa pilaf to store. Should be a good mix!
Dinner: Chicken breast, Creamy Zucchini Soup, peas
Snacks: Grapes, nuts
I started sprouting some great northern beans. They should be ready by the time I need them. I will also spout black beans, but just soak the pinto and garbanzo beans for simplicity’s sake.
