Elimination Diet, Day 43 (Eggs)

Today I added in eggs, which means more opportunities for baking and really filling breakfasts. My breakfast was kinda late, but I still wasn’t hungry for lunch until quite late. Instead, I just hung out in the kitchen preparing future meals. I have never been a huge egg fan, but they are so good for you. Natural source of vitamin D, healthy fats, good cholesterol, all sorts of nutrients, good source of protein, very filling. I’m happy to be able to incorporate them into my diet.

Health
My skin is looking great. It is a bit dry, but there is no irritation. Just healing to be done. My stomach has also felt great today. Which means that the stomach aches I’ve had were just from binging. That makes me happy.

Food
Breakfast: Omelet with spinach, cheese, and herbs; glass of milk; strawberries
Lunch: Lentil and Kale Dal, carrot, spinach
Dinner: Leftover Loaded Baked Cauliflower
Snacks: Nuts, cherries, a banana, 1/2 a Carrot Almond Muffin (Nourishing Meals Cookbook, page 150) – I thought these were AMAZING. Mr. Skeptical Grumpy Pants (aka my fiancé, the baker, who isn’t a huge nut fan) said they weren’t bad.

Preparation
In addition to making the muffins, which will last me a few breakfasts, I also prepared Apple Pancake batter for breakfast tomorrow and Nomato Sauce (more about that tomorrow) for when I make pizza. I froze the muffins to keep them from all getting eaten today. You can heat thawed muffins in the microwave for about 30 seconds.
