About a year and a half ago, I began my journey to real food in an effort to heal my eczema and soon learned that I am very sensitive to nightshades. I have managed to compensate and find alternatives for most of my favorite dishes. I tend to not miss them too much unless I am confronted with an old favorite. After all, white sweet potatoes are tasty and my nomato sauce opens up a whole range of tomato-free dishes. But lately there has been one thing I have really been craving: enchiladas.
But how do you make nightshade free enchiladas? I knew that if I were ever going to have enchiladas again, I would have to figure a recipe out myself. So I got to work. I found a tortilla recipe I could eat and created a nightshade free enchilada sauce that would do the trick.
Now, this sauce probably won’t fool your family, but it sure is tasty! If you, too, are longing for nightshade free enchiladas, this recipe will take care of your cravings and make you a very, very happy cook. 🙂

I’ve never used horseradish before – in the recipe, do you mean the root freshly grated or prepared horseradish?

My father-in-law makes his own horseradish, so I used prepared. However freshly grated would also work quite well.
