It was weird not posting yesterday. I spent two months posting every day! And those two months taught me a lot. I only hope that I can remember to continue to use this knowledge to live a healthy life and, most importantly, to keep learning! I learned:
How to cook my own nutritious and delicious meals.
How to nourish myself with food.
How to appreciate and even enjoy foods I had never had before or thought I didn’t like.
How to adapt and create my own recipes.
The amount of work that goes into preparing a meal.
The importance of composting. I have always known it was important, but I learned how much raw food waste can be generated by preparing a meal. There is no reason for all that to go in the garbage.
I can resist processed junk foods if I choose to.
Mindless snacking is something I can conquer. I just need to put my mind back in it. This diet required me to do so.
I am a meat eater.
My acne is just as related to what I eat as it is to stress and hormones.
My eczema may be exasperated by the environment, but its root is at food.
Shea butter and aloe are both amazing for skin, and are perfection when used together.
I have a sensitivity to nightshades, always a staple in my diet. I didn’t even know such a sensitivity was possible. I also have a sensitivity to beans.
I have a wonderful and supportive fiancé. I have always known this, but when he told me of course we can have a nightshade-free household…that just meant more to me than he could ever know.
And I have hopefully learned to avoid the autoimmune problems that my mom has. There is more research to be done, but I’m very excited by the prospect of avoiding rheumatoid arthritis, the shots that go with it, and other problems.
